For Valentine’s Day Maison Alain FRANÇOIS offers you a recipe of Rossini of duck breast tournedos with truffle.
Ingredients for 2 people
- 2 duck breast tournedos Alain FRANÇOIS
- 2 flash frozen slices of duck Foie Gras 50g Alain FRANÇOIS
- Few slices of fresh black truffles from Perigord
- Fleur de sel and freshly ground pepper
Cut some thin slices of fresh truffle. Ideally with a mandolin for truffle.
In a frying pan, cook the duck breast tournedos about 4 minutes on each side. Then set aside on a plate.
Put the flash frozen slices of duck Foie Gras in the frying pan, and cook about 2-3 minutes on each side until well browned.
Introduce the duck breast tournedos on hot plates and place the flash frozen slices of duck Foie Gras on the top. Pepper, salt them and finally add the black truffles slices.
